White wine soon as healthy as red wine

The beneficial effects of red wine on the heart and blood vessels are well documented. They are mainly the result of the presence of the powerful antioxidants or polyphenols present on the skins of the grapes, which are used to make red wine but are not used for white wine. Michael Aviram from the Tehnion-Israel Institute of Technology in Haifa has recently succeeded in increasing the antioxidant effect of white wine by steeping the grapes used for white wine in ethanol before removing the skins. His experiment shows that the process gives the extracts used for white wine the same powerful antioxidant properties as red wine. If his technique gains acceptance in the wine-houses, white wine will soon be as good for the heart as red wine.
